Reheating leftover rice is a common habit in most households - but if handled incorrectly, it can lead to food poisoning. The problem is not the rice itself, but how it is stored and reheated.

According to doctors, improper handling of cooked rice allows harmful bacteria like Bacillus cereus to grow, increasing the risk of illness, and can sometimes even be fatal.

Experts say cooked rice – otherwise a powerhouse of nutrition - can contain spores of Bacillus cereus, a bacterium that survives even after cooking. When rice is left at room temperature for too long, these spores can multiply and produce toxins.

The dangerous part? These toxins are heat-resistant, meaning reheating the rice may not destroy them.

According to doctors, fried rice syndrome is a type of food poisoning linked to contaminated rice or other starchy foods like pasta. Food poisoning from rice shows up quite quickly, with symptoms often beginning within six to 12 hours after eating contaminated food.

People begin to experience nausea, vomiting, stomach cramps, and diarrhoea. In many cases, the illness starts suddenly and can feel intense, though it usually settles within a day.
